Raw chocolate from old recipe based on "mass of high-quality cocoa and brown sugar". Still today a handmade work called "cold process" is performed as in the past.
With traditional techniques, we get an unrefined chocolate, crumbly and crispy, with a different look and taste compared to the classic recipe, since it is clear on the palate the contrast between the bitter cocoa and the sweet sugar crystals.
